As a treat to myself I have a copy of the book at home and baked the Chocalicious Cupcakes over the weekend which were absolutely divine! Here's the recipe. The mixture is enough for 12 cupcakes but I would definitely recommend baking more! A few went missing before I served them (erm, whilst they were cooling, I just couldn't help myself!) so next time I'll be doubling up on the mixture that's for sure.
'Chocalicious Cupcakes Recipe'
You'll need -
'Chocalicious Cupcakes Recipe'
You'll need -
150g Softened Butter
150g Caster Sugar
175g Self-Raising Flour
50g Cocoa Powder
3 Large Eggs
1 Tsp Vanilla Extract
Here's how to bake -
Heat the oven to 180°C or Gas Mark 4
Line a cupcake pan with your cupcake papers
Gently break the eggs into a cup and beat lightly with a fork
Place all the ingredients in a large bowl
Beat with electric mixer for around 2 minutes or at least until the mixture is light and fluffy
Spoon the cupcake mixture evenly between the paper cases.
Bake in the centre of the oven for 15-20 minutes or until risen and firm to touchLeave to cool for a few minutes and then transfer to a wire rack (try to keep hands off of them at this stage!)
Once completely cool you can decorate with frosting or icing and enjoy. I enjoyed mine with chocolate frosting and cadbury's flake... yum!
